Blueberry
Pancakes
I had a lot of leftover blueberries, so the goal became to make a vegan pancake that was both thick and fluffy.

Ingredients:
1 cup of fresh or frozen blueberries
2 cups of flour
3 tablespoons of sugar
1 teaspoon of salt
2 tablespoons baking powder
Makes about 8 pancakes
- Grease and heat skillet. 
- Combine all ingredients in a bowl. 
- Pour batter into pan. 
- Cook for about a minute or until ready to flip. 
- Flip and cook for about another minute or so. 
- Repeat until all pancakes are cooked. 
- Top with more blueberries and or maple syrup. 
- Enjoy!
