chickpea pesto salad collard green wrap

Originally posted these as mustard greens wraps and realized they were mis-labled. Ooops! Yeahhh we made a mistake, but it does not change how delicious these wraps are!

Ingredients:

                Chickpea Pesto Salad:

·         Nasturtium Pesto (Link to the Recipe)

·         2 (14 oz) can of chickpeas (rinsed and drained)

·         1 cup grape tomatoes (halved)

·         ¼ cup diced red onion

·         ¼ cup pitted kalamata olives

·         1 cucumber (cubed)

                For the Wrap:

·         Collard Green leaves

·         Additional pesto to top collard greens

·         Sliced bell pepper

·         Avocado

Instructions:

1.       Place chickpeas in a bowl.

2.       Add cumbers, tomatoes, olives. Onions, and pesto

3.       Mix well

4.       Prep you Collard Greens: place in boiling water for 5 minutes or less, then blanch in cold water

5.       Build you wrap: Spread pesto on collard green. Then top with chickpea salad, bell pepper, and avocado

6.       Roll you wrap
