Cilantro Lime Quinoa
Just think a slightly healthier version of the rice you love so much!

Ingredients:
1 cup of quinoa
¼ cup chopped cilantro
Juice from 1 lime
1 tbsp vegan butter
2 cups of vegetable broth or water
1 tbsp minced garlic
Season to taste: salt, pepper, garlic powder, onion powder, smoked paprika
Serves about 4
- In a pot, combine the broth or water with the quinoa and garlic. 
- Bring to a boil. Cover and reduce heat. 
- Cook until all liquid has evaporated, and quinoa is tender. 
- Remove from heat. 
- Add butter, cilantro, lime juice, and seasonings. 
- Stir well 
- Enjoy!
