gooey butter cookies
These became my fav on my first trip to St. Louis, MO so I had to veganize them!

Ingredients:
- ½ cup vegan butter at room temperature 
- 1 (8 oz.) package of vegan cream cheese at room temperature 
- 3 tbsps of vegan vanilla yogurt (this will be your egg replacer) 
- ½ tsp vanilla extract 
- 1 package of white cake mix 
- ½ cup of Christmas sprinkles of your choice 
- ½ cup of powder sugar (placed in a bowl) 
- Optional: red and green sugar crystals 
About 24 cookies
- In a bowl, cream together butter and cream cheese. 
- Add yogurt, vanilla, Christmas Sprinkles, and cake mix. Mix well. 
- Cover dough with plastic wrap and refrigerate for at least 1 hour to allow cookie dough to become firm. 
- Preheat over to 350 degrees F. 
- Line 2 cookie sheets with parchment paper. 
- Potion chilled dough with a teaspoon into 1inch balls. 
- Roll each ball in powdered sugar and place about 2 inches apart on prepared cookie sheets. 
- Optional: Sprinkle colored sugar crystals on top of each ball 
- Bake for 10-13 minutes. 
- Let cookies sit for about 2 minutes before moving them to cooling racks to cool completely.
