Korean glass noodle stir fry
A friend brought these glass noodles back from their trip to South Korea and this is how I decided to prepare them. The best souvenir, Food! And just FYI you do not have to travel all the way to South Korea to get these noodles. You can find these noodles in your local Asian market.
Ingredients:
· 1 package of glass noodles
· 1 red pepper chopped
· 1 container of firm tofu
· 2 cups of sliced mushrooms
· 4 cups of baby bok choy
· 1 tbsp minced garlic
· 1 tbsp minced ginger
· 3 tbsp sesame oil
· 1 tbsp of coconut oil
· 2 tbsp agave nectar
· ¼- ½ cup low sodium soy sauce
· ½ cup shredded carrots
· ½ cup chopped red onion
· For serving:
§ Toasted sesame seeds
§ 2 stalks of sliced scallions
§ ½ cup cilantro
§ Juice from 1-2 limes
§ Optional: Sriracha
Instructions:
1. Cook glass noodles according to the package. Drain and set aside.
2. Remove Tofu from the container. With paper towels absorb excess liquid.
3. Slice Tofu into cubes.
4. In a large skillet, heat coconut oil and add sliced tofu. Fry for about 3 minutes on each side until golden brown.
5. In a large wok or pan heat 2 tbsp of sesame seed oil.
6. Add garlic, onions, and ginger. Cook for 2 minutes then add peppers.
7. Cook peppers for minutes then add baby bok choy, carrots, and mushrooms. Cook for about 2 minutes.
8. Lower heat then add tofu and cooked noodles. Top with soy sauce and agave. Mix well.
9. Top with sesame seed, scallions, cilantro, and lime juice before serving. Add Siracha for a little heat.
