plantin chocolate chip bread
I had leftover plantin from another recipe, so I decided to see if I could make a flourless bread with it. Decided to add some chocolate chips to satisfy my sweet tooth and bam! This became one of those experiments gone right!

Ingredients:
1 ripe Plantain
2 tbsp. agave
2 tbsp. vegan chocolate chips (and a little extra to put on the top)
2 tbsp. flax meal mixed with 6 tbsp. of hot water (mix this together and let it sit for 5 minutes. This combo is your Flax Egg)
3 tbsp. nut butter (I used Peanut Butter)
1 tbsp. Nutmeg
1 tbsp. Cinnamon
Splash of Vanilla Extract
Pinch of Allspice (optional)
*Makes a small loaf of bread
- Preheat oven for 350 degrees F. 
- Grease a small loaf pan. 
- Place all ingredients (minus the chocolate chips) into a food processor or blender. 
- Blend well. 
- Stir in chocolate chips and transfer mixture to loaf pan. 
- Top with additional chocolate chips. 
- Place into the oven and bake for ….minutes or until a fork comes out clean. 
- Remove from the oven and let cool. 
- Enjoy!
