Tofu Scramble
Just think scrambled eggs, but so much better!

Ingredients:
1 package of extra firm tofu (drained)
1 cup chopped onions
1 cup chopped mixed bell peppers
2 cups chopped mushrooms
2 cups of spinach
1 large jalapeno diced
½ cup nutritional yeast
1 tbsp. minced garlic
2 tsp. turmeric
1 tbsp. avocado oil (or cooking oil of choice)
Season To Taste: seasoned salt, black pepper, onion powder
- Mash tofu into small curds (think scrambled eggs) 
- Heat oil in a large skillet over medium-high heat. 
- Add veggies (onions, peppers, mushrooms, spinach, garlic) and sauté until Spinach starts to wilt. 
- Add tofu, nutritional east, turmeric, and other seasonings. 
- Sauté until tofu is completely yellow and heated (2-3 minutes). 
- Serve over toast with sliced avocado. 
- Enjoy!
