yuca fries
Cassava was apart of my diet growing up, but I never knew it could be a fry! My mind was blown while at a vegan restaurant in Bastimentos, Panama. They had Yuca fries on their menu and once I tried them, I knew I had to recreate it when I got back home!

Ingredients:
2 lbs. of yuca
Avocado oil for frying (or an oil of your choice that will not burn at high temperatures)
Season To Taste: seasoned salt, garlic & onion powder
- Peel and cut yuca into thick cut fries. 
- Place yuca into a large pot and add water to cover. 
- Boil yuca until it can be pierced easily with a fork (about 20 minutes). 
- Drain. 
- Heat the oil over medium high heat in a frying pan (you want to use enough oil to almost cover the yuca fries) 
- Fry the yuca in batches (do not overcrowd frying pan) until golden brown and crispy on both sides. 
- Remove and drain oil in a paper towel-lined bowl. 
- Toss with seasonings to taste and serve hot. 
- Enjoy
