Zucchini Fries
The Dijon mustard gives a great flavor and the panko crumbs gives it that “fried” texture without the added oil. I added hempseeds to give it a health boost and it adds to the texture. These are great as an appetizer or you could serve this as a side.

Ingredients:
3 medium zucchinis (sliced into “fries”)
1 cup panko crumbs
½ cup hemp seeds
½ cup nutritional yeast
¾ cup plant milk
2 Tbsp. Dijon mustard
1 tsp: garlic powder, black pepper, seasoned salt
Instructions
- Preheat oven to 450 degrees F. 
- Line 2 baking sheets with parchment paper. 
- In a bowl whisk together the panko crumbs, hemp seeds, and nutritional yeast (dry coating). 
- In another bowl whisk together the mustard and plant milk (wet mixture). 
- Dip each zucchini fry into the wet mixture that coat in the dry coating. 
- Place dipped and coated fries on the baking sheet. 
- Back for 15 minutes then turn and bake for another 10 minutes or until fries are crisp and golden brown.
